Choose the Right Apples: Aim for a mix of sweet and tart apples, like Granny Smith and Honeycrisp, for a balanced flavor in the filling.
Perfect the Crust-to-Filling Ratio: Achieve an even distribution of crust and filling in each bar to maintain a harmonious balance of flavors and textures.
Prevent Soggy Bottoms: Brush a thin layer of beaten egg white over the crust before adding the filling to create a protective barrier and keep the crust crisp.
Master the Art of Layering: Ensure each layer – crust, filling, and topping – is evenly spread to create a symphony of flavors and textures.
Allow for Proper Cooling: Let the bars cool completely before cutting into them. This allows the filling to set, making it easier to achieve clean, beautiful slices.

Flaky Apple Pie Bars
Ingredients
- 2 ½ cups all-purpose flour
- 2 tbsp white sugar
- 2 egg yolks
- ½ cup milk
- ½ tsp salt
- 1 cup shortening
- 2 egg whites
- 9 apple – peeled, cored and sliced
- ¾ cup white sugar
- ½ tsp ground cinnamon
- 1 ½ cups confectioners’ sugar
- 1 pinch salt
- 1 tsp vanilla extract
- 3 tbsp milk
Instructions
- Preheat oven at about 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
- Stir the flour, 2 tbsp of sugar, and salt in a medium bowl. Cut in the shortening until it resembles coarse crumbs. Add and combine egg yolks and 1/2 cup of milk; stir it into the flour mixture.
- Roll the half of the dough on a lightly floured surface out to the size of the prepared pan. Cover the inside of the pan with the dough. Then, spread though with a light coating of egg white. Fill with sliced apples and sprinkle with sugar and cinnamon on top. Roll out the remaining dough and put it on top of the apples. Brush using a light coating of egg white.
- In a preheated oven, bake it for 35 to 40 minutes until the crust is golden. Beat the confectioner’s sugar, salt, vanilla, and milk in a small bowl until smooth. Drizzle over the cooled bars, and cut into squares.
Notes
- Instead of folding over the edges, you can also use a knife to lightly cut (score) around the edges. This will help the outside edge puff up more than the inside of the pie filling.
- Serve while warm or refrigerate for later.
